Balladeer Cabernet Sauvignon

COLOUR Dark Red. NOSE Tones of deep plums, currents and chocolate. PALATE Ripe red berry fruits, firm tannins with great length. FOOD MATCH The classic pairing with Cabernet Sauvignon is lamb, but for something a little different match our Cabernet Sauvignon with a big bowl of rich, dark, slow cooked rabbit, with wild rice. WINEMAKER COMMENTS Matured for 12 months in French Oak Hogsheads. Our extended growing season resulted in an excellent flavour development in these grapes. Traditional winemaking techniques of open ferments and hand plunge have created a wine of great flavour and texture.
